An Aussie Classic Apple Crumble Recipe

Ever found yourself with a few apples about to turn, and that little voice in your head saying 'don't waste them’? That was me today, I had 6 decent sized green apples that I knew no one was going to eat this week and passionately hating food waste I immediately jumped into action. But what to make? There’s only so much apple sauce one can eat. Then I remembered my all time childhood fav comfort food - apple crumble. The smell of cinnamon, and apples stewing hmmmmm. There’s something so deeply comforting and resilient about transforming simple ingredients into a beloved treat

The weather this weekend is stormy and cold, so what a perfect time to throw together this simple “pie” with ingredients I already have in the house. This recipe is as easy as it gets. Just check the apple and liquid in a pot and cook until soft and mix everything else in a bowl. Whack it in the oven and bam done in 30! But what’s with the double-crumble I hear you say? But let's be honest, who doesn't think there's never enough crumble? So, my hack is to always, always double the crumble mixture! You won't regret it.

Finally, this isn't just a recipe about food; it's about making the most of what you have, honouring resources, and finding joy in simple pleasures, which is at the heart of living a resilient life. Here's the recipe I use: tried, tested, and approved for maximum comfort and minimal waste (if you follow through to the next step!).

Apple Crumble Recipe

Ingredients:

  • 5-6 Granny Smith apples (750g peeled and chopped)

  • 2 Tbsp water

  • 2 Tbsp lemon juice (juice of one medium sized)

  • 1⁄4 cup white sugar

  • Double Crumble:

    • 200g butter, melted

    • 1 cup brown sugar (200g)

    • 3 cups rolled oats (320g)

    • 1 1⁄2 cups plain flour (220g)

    • 1⁄2 tsp ground cinnamon

    • 1⁄2 tsp mixed spice

  • Instructions:

    1. Peel the apples and chop into 1cm wide pieces. Preheat oven to 180°C fan bake.

    2. In a medium saucepan add the apples, water, white sugar, cloves and lemon juice. Bring to a gentle simmer over a medium heat stirring occasionally.

    3. Cook 5 - 10 minutes until the apples soften up but still hold their shape. Remove from the heat.

    4. In a bowl, mix the melted butter and brown sugar. Add the oats, flour and spices, mix together. (Remember, this has been doubled for maximum deliciousness! If you want less crumble, half).

    5. Pour the apples into a baking dish or individual pie dishes. Crumble over the oat mixture, I smooth it out with the back of a spoon..

    6. Bake for 30 minutes or until the crumble is crisp and golden.

    7. Serve warm with hot custard, fresh cream or ice cream.

  • Notes:

    • Granny smith apples can be substituted for other types of apples or even stone fruit if you prefer.

    • If you like a bit of crunch in your apples, you can skip the stewing stage and leave out the water.

    • Nuts can also be added to the crumble mixture.
